Refreshing Lemon Pudding Recipe:
Ingredients:
For the Pudding:
- 1 can sweetened condensed milk
- 1 can milk (use the sweetened condensed milk can as a measure)
- 3 eggs
- Juice of 3 medium lemons (approximately 1/2 cup)
- Lemon zest (optional, for decoration)
For the Caramel:
- 1 cup sugar
- 1/2 cup water
Instructions:
- Caramel Preparation:
- In a saucepan, dissolve sugar in water and bring to medium heat.
- Allow the mixture to boil until it reaches a golden caramel. Be cautious to avoid burning.
- Pour the caramel evenly into the bottom and sides of a pudding mold. Set aside.
- Pudding Preparation:
- Preheat the oven to 180°C (356°F).
- In a blender, blend sweetened condensed milk, milk, eggs, and lemon juice until a homogeneous mixture is achieved.
- Pour the mixture into the mold prepared with the caramel.
- Baking the Pudding:
- Cover the mold with aluminum foil and bake in a water bath for approximately 1 hour or until a toothpick comes out clean when inserted.
- Remove from the oven and allow it to cool. Then, refrigerate for at least 4 hours or until well-chilled.
- Unmolding and Serving:
- Run a knife around the pudding to release it from the mold.
- Place a serving plate over the mold and invert in one swift motion. The caramel will drizzle over the pudding.
- Decorate with lemon zest, if desired.
